I had been meaning to test
One-Pan Pasta since I saw it one Tumblr something like a year ago. It really works, it's very tasty, I totally recommend it. It takes about 20 minutes start to finish.
I also found a variant online that kept basically everything but suggested adding precooked sausage. I'll probably try that soon. (As the recipe is above, it's vegan and ARR-safe.)
My mother brought us back a bunch of spice mixes from Thailand, and so far the best of them has been
Lobo Thai Oriental Spicy Chicken-in-rice Seasoning Mix. The thing is, all of the other mixes have been very spicy (shockingly, this was the least spicy so far), so I made a differently-spiced set with the same cooking method at the same time. They both came out well.
All there is to it is: Rub chicken* with spice** mix. Let sit for 15 minutes. Put a cup and a half of rice and three cups of water in a pot with the chicken. Cover tightly, bring to boil, then reduce heat and let simmer until all the water is absorbed, then put a paper towel under the pot lid and let it stand for ten minutes. (Basically, cook the whole thing like you're cooking plain rice.) Then fluff and serve.
*I used two thighs. I could probably have put all four in one pan.**My mix was garlic, onion powder, cumin, garam masala, salt and pepper, and then a chicken bullion cube in with the water.
